Ingredients


  • 1 can (14.5 oz each) Hunt'sŪ Petite Diced Tomatoes, drained
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons soy sauce
  • 1/8 teaspoon ground black pepper
  • 4 tablespoons crumbled Parmesan cheese
  •   Chopped chives, optional
  •   Toasted baguette bread slices, optional

Directions

  1. Place drained tomatoes, oil, vinegar, soy sauce and pepper in bowl. Stir to combine.
  2. To serve, top tomato mixture with crumbled cheese and chives, if desired. Tomato mixture also may be served on toasted bread slices, if desired.

Cook's Tips

  1. For a unique presentation, place 1 tablespoon tomato mixture on stand-alone ceramic spoons. Top with cheese and chives, if desired. Guests can serve themselves by grabbing a prepared 'spoonful'. Serve tomato mixture on grilled or sauteed polenta rounds as an alternative to the toast.
