Ingredients

  • 6 slices pancetta or bacon, chopped
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 2 tablespoons balsamic vinegar
  • 2 cans (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley

Directions

  1. Cook pancetta in large saucepan over medium heat 5 to 7 minutes or until crisp. Add onion; cook 3 to 5 minutes or until tender. Add garlic; cook 1 minute or until fragrant. Add vinegar; cook 1 to 2 minutes or until vinegar is reduced by half.
  2. Add undrained tomatoes to saucepan; reduce heat and simmer 10 minutes or until sauce has thickened slightly. Stir in salt, pepper and parsley.
