Ingredients
- 6 slices pancetta or bacon, chopped
- 1 cup chopped onion
- 1 teaspoon minced garlic
- 2 tablespoons balsamic vinegar
- 2 cans (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons chopped fresh Italian (flat-leaf) parsley

Serving Size: 3 cups, 6 servings (1/2 cup each)
Directions
- Cook pancetta in large saucepan over medium heat 5 to 7 minutes or until crisp. Add onion; cook 3 to 5 minutes or until tender. Add garlic; cook 1 minute or until fragrant. Add vinegar; cook 1 to 2 minutes or until vinegar is reduced by half.
- Add undrained tomatoes to saucepan; reduce heat and simmer 10 minutes or until sauce has thickened slightly. Stir in salt, pepper and parsley.
