Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 cup chopped onion
  • 2 teaspoons finely chopped garlic
  • 1 can (28 oz each) Hunt's® Crushed Tomatoes
  • 1 cup reduced-sodium chicken broth
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground black pepper
  • Dash ground cloves
  • 1 tablespoon chopped fresh mint leaves

Directions

  1. Heat oil over medium-high heat in large saucepan until hot. Add onion; cook 3 to 5 minutes or until tender. Add garlic; cook 1 minute or until fragrant.
  2. Add tomatoes, broth, salt, cinnamon, coriander, pepper and cloves to saucepan; bring to a boil. Reduce heat; simmer 10 minutes or until slightly thickened. Stir in mint.

Cook's Tip

Serve this sauce over chicken, beef, lamb, roasted eggplant or grilled portobello mushrooms accompanied with couscous or rice. Add sauteed zucchini and yellow squash for a side dish.

Because my husband eats a can of tomatos every day, this recipe offered him a delightful change in taste. The cinnamon might seem strange, but if you like mousaka - you will love this!

This is a delicious and easy recipe. It is made to go on many meets. I used the sauce over chicken. My family enjoyed the meal. I provide a rating of 4 for this recipe. Hunt's makes things very easy and the recipe is very clear. Additionally, the nutritional value of this recipe makes me feel good about feeding it to my children. The limited calories and fat in the sauce is amazing as compared to many sauces that go over meats. We were happy that this information was provided for us.
