Ingredients

  • 2 cans (14 oz each) quartered artichoke hearts in water, drained
  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
  • 3/4 cup quartered and sliced red onion
  • 1/4 cup thinly sliced green onions
  • 1/4 cup minced jalapeno pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons minced garlic
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon kosher salt

Directions

  1. Combine all ingredients in large bowl. Mix well.
  2. Chill 45 minutes.

Cook's Tip

For a richer flavor, use marinated artichoke hearts instead of artichoke hearts in water. This recipe can be served in a variety of ways --- try it as an appetizer served with tortilla chips or wedges of pita bread. Or, serve as a salad on lettuce leaves.
