Ingredients
- 2 cans (14 oz each) quartered artichoke hearts in water, drained
- 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
- 3/4 cup quartered and sliced red onion
- 1/4 cup thinly sliced green onions
- 1/4 cup minced jalapeno pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons minced garlic
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon kosher salt

Directions
- Combine all ingredients in large bowl. Mix well.
- Chill 45 minutes.
Cook's Tip
For a richer flavor, use marinated artichoke hearts instead of artichoke hearts in water.
This recipe can be served in a variety of ways --- try it as an appetizer served with tortilla chips or wedges of pita bread. Or, serve as a salad on lettuce leaves.
