Ingredients

  • 1 pound lean ground beef (93% lean)
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 cups lower sodium beef broth
  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
  • 2 cups frozen mixed vegetables
  • 1-1/2 cups instant brown rice, uncooked

Directions

  1. Cook beef with salt and garlic powder in deep 12-inch skillet over medium-high heat until crumbled and no longer pink. Add all remaining ingredients to skillet. Stir to combine.
  2. Bring to a boil. Cover and reduce heat to medium-low. Cook 5 minutes or until rice is tender and mixture is of desired consistency.

Cook's Tip

A large saucepan or Dutch oven may be substituted for the deep skillet.

I made this meal for my husband and I on Friday and it was absolutely delicious. As I normally do, I love to add cayenne pepper to a lot of what I cook. I really think the beef broth made it taste great especially when it comes to cooking with brown rice which has very little if not any flavor to begin with. This is a meal that I will definitely make again :-)

Just a tip for those who said it lacks taste.. It tastes amazing with Adobo powder in it!

It was really healthy, so we ate it, but overall it had very little flavor. It just tasted like hamburger with a hint of brown rice in it. I make rice casserole type dishes Very often, but this one was quite the let down =(

this was super easy and fast, very tasty as is. We dont use alot of instant rice so we made rice seperate as we cooked beef, then added it with the rest of the ingredients in large dutch oven to finish cooking. Heres an extra tip.. try cubing left over chicken and using chicken broth instaed of beef. 2nd meal just as easy as this one and just as tasty!
