Ingredients
- 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained
- 1 tablespoon minced shallots
- 1-1/2 teaspoons chopped fresh Italian (flat-leaf) parsley
- 1-1/2 teaspoons chopped fresh basil
- 16 slices (3/4 inch thick) French bread, toasted
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon minced shallots
- 1-1/2 teaspoons chopped fresh Italian (flat-leaf) parsley
- 1-1/2 teaspoons chopped fresh basil
- 1 teaspoon Gulden's® Spicy Brown Mustard
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 24 fresh asparagus spears, peeled, blanched
- 8 ounces smoked Gouda cheese, sliced
- 8 large leaves Boston lettuce, cut in half lengthwise
- 2 ounces thinly sliced prosciutto

Serving Size: 8 servings
Directions
- Make Bruschetta: Combine drained tomatoes, shallots, parsley and basil in small bowl. Spread about 1 tablespoon tomato mixture on each slice of bread.
- Make Dressing: Whisk together all dressing ingredients in small bowl.
- Arrange asparagus, cheese, lettuce, prosciutto and bruschetta on large platter. Serve dressing on the side.
Cook's Tip
To blanch asparagus, drop spears into large pan of boiling water and cook 3 to 4 minutes or until barely tender. Drain and place in ice cold water to quickly stop the cooking. Blanching partially cooks the asparagus and brightens the color.
