Ingredients

  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
  • 1/2 cup water
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons thinly sliced fresh basil
  • 2 tablespoons minced red onion
  • 1 tablespoon red wine vinegar
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1 cup quinoa, uncooked
  • 1/4 cup shredded Manchego cheese

Directions

  1. Combine undrained tomatoes, water, oil, basil, onion, vinegar, salt and pepper in medium saucepan.
  2. Add quinoa to saucepan; bring to a boil over medium-high heat. Cover, reduce heat to medium-low and simmer 15 minutes. Remove lid; simmer 5 minutes more or until liquid is absorbed, if necessary. Sprinkle with cheese.

Cook's Tip

Look for brands of quinoa that have been pre-rinsed to remove the bitter natural coating. This saves some prep time. Manchego cheese can be found in the specialty cheese section of your local supermarket. Parmesan cheese may be substituted for the Manchego cheese.
