  • 1 cup shredded cooked chicken
  • 2 hard-cooked eggs, chopped
  • 1/2 cup chopped celery
  • 1/2 cup finely chopped onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • Lettuce leaves, optional
  • 1/2 cup refrigerated basil pesto

Directions

Wow, what a great low-carb meal! Hubs and I are on Atkins so I am always struggling to find new, delicious meals to make for us. Will likely leave out the onion though as he is not a fan. This will be a winner (:
