Ingredients

  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained
  • 1/2 cup chopped red onion
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped chipotle pepper in adobo sauce
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon minced garlic
  • 1 tablespoon finely chopped jalapeno pepper
  • 1 tablespoon Pure Wesson® Canola Oil
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated sugar
  • 1/8 teaspoon ground black pepper
  • 5 flour tortillas (10 inch)
  • 1-1/4 cups shredded Monterey Jack cheese
  • 1-1/2 cups cooked shredded chicken breast

Directions

  1. Prepare salsa by combining drained tomatoes, onion, lime juice, chipotle pepper, cilantro, garlic, jalapeno pepper, oil, salt, sugar and black pepper in medium bowl. Remove one-fourth of the salsa and place in blender container; pulse 1 to 2 minutes or until mixture is pureed. Combine pureed mixture with remaining salsa; set aside.
  2. Assemble quesadillas by placing tortillas on flat work surface; sprinkle each tortilla with 1/4 cup cheese. Place about 1/4 cup chicken and 2 tablespoons salsa over half of each tortilla. Fold tortillas over filling; set aside.
  3. Heat medium nonstick skillet over medium-high heat. Add one quesadilla and cook each side 1 to 2 minutes or until cheese melts and quesadilla is browned and crisp. Remove from skillet. Repeat with remaining quesadillas.
  4. Serve immediately with remaining salsa.
