Ingredients

  • 3 cups reduced-sodium chicken broth
  • 1-1/2 cups water
  • 1/4 cup butter
  • 1 cup chopped yellow onion
  • 2 cups Italian Arborio rice, uncooked
  • 1 cup dry white wine (such as Pinot Blanc or Chardonnay)
  • 2 cups frozen green peas, thawed
  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
  • 1/2 cup sliced green onions
  • 3/4 teaspoon ground black pepper
  • 1 ounce Parmesan cheese, freshly grated (1 oz = about 1 cup loosely packed)

Directions

  1. Bring broth and water to a boil in medium saucepan. Keep warm over low heat.
  2. Melt butter in large saucepan or large deep skillet over medium heat. Add yellow onion; cook 6 to 8 minutes or until tender. Add rice; cook and stir constantly 1 to 2 minutes or until ends of rice start to become translucent.
  3. Add wine; cook 5 to 7 minutes or until all of the wine is absorbed, stirring often. Add 3 cups of the broth mixture; bring to a simmer. Reduce heat to medium-low and simmer, uncovered, 15 to 20 minutes or until liquid is absorbed, stirring occasionally.
  4. Add another 1/2 cup broth mixture and cook and stir constantly 4 to 6 minutes or until liquid is absorbed. Repeat adding 1/2 cup broth at a time and stirring constantly until rice is almost cooked or all of broth mixture is used. Stir in peas, undrained tomatoes, green onions and pepper. Cook 1 to 2 minutes more until rice is tender and liquid is absorbed, stirring constantly. Add cheese and stir until it melts. Serve immediately.

Cook's Tip

Risotto is a creamy rice dish made with Arborio rice (an Italian short-grain rice with a high starch content) that is stirred constantly as hot broth is added 1/2 cup at a time. It typically is finished with some butter and Parmesan cheese. Vegetables and/or protein are added frequently as well. This risotto is great served with sauteed shrimp.
