Ingredients

  • 1 tablespoon Pure Wesson® Vegetable Oil
  • 1 cup chopped celery
  • 1/2 large onion, chopped (1/2 large = about 1 cup)
  • 1 teaspoon finely chopped garlic
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, undrained
  • 1 can (14 oz each) reduced-sodium chicken broth
  • 1 pkg (13 oz each) andouille sausage, sliced 1/4-inch thick
  • 1 cup long-grain white rice, uncooked
  • 8 ounces medium shrimp, peeled and deveined
  • 1/4 teaspoon ground black pepper

Directions

  1. Heat oil in 6-quart saucepan over medium-high heat. Add celery, onion and garlic. Cook 5 minutes or until onion is tender, stirring often.
  2. Add undrained tomatoes, broth, sausage and rice; bring to a boil over high heat. Cover saucepan with lid; reduce heat to low. Simmer 20 minutes or until rice is tender and liquid has been absorbed.
  3. Stir in shrimp and pepper. Continue to cook, covered, 2 minutes more or until shrimp turns pink.

Cook's Tip

If andouille sausage is not available, substitute smoked sausage or polska kielbasa.
