Ingredients

  • 1/4 cup extra virgin olive oil
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped carrot
  • 1 tablespoon minced garlic
  • 4 cups finely chopped peeled eggplant (4 cups = 1 medium, about 1 lb)
  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, undrained
  • 2 tablespoons Hunt's® Tomato Paste
  • 1 tablespoon drained capers
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons honey
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • Pita chips, optional

Directions

  1. Heat oil in large skillet over medium-high heat until hot. Add onion, carrots and garlic. Cook 3 to 4 minutes or until onion is tender, stirring occasionally.
  2. Add eggplant, undrained tomatoes, tomato paste, capers and red pepper. Cook 5 to 7 minutes or until liquid is absorbed, stirring occasionally.
  3. Mix in honey, vinegar, salt and black pepper. Reduce heat to medium-low. Simmer 8 to 10 minutes or until eggplant is tender.
  4. Serve warm or at room temperature.

Cook's Tip

As eggplants age, they become mushy and slightly bitter. If the eggplant skin does not bounce back to the touch, sprinkle about 1 teaspoon salt over chopped eggplant. Place in a colander set over a bowl, cover with a plate and weigh down with a can. Let stand about 30 minutes to remove some of the bitter juices. For an appetizer, slice a baguette or cut pita flatbread into wedges. Brush with olive oil and toast in oven. Serve with caponata.
