Fire-Roasted Caponata

Ingredients
- 1/4 cup extra virgin olive oil
- 1/2 cup finely chopped red onion
- 1/4 cup finely chopped carrot
- 1 tablespoon minced garlic
- 4 cups finely chopped peeled eggplant (4 cups = 1 medium, about 1 lb)
- 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, undrained
- 2 tablespoons Hunt's® Tomato Paste
- 1 tablespoon drained capers
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons honey
- 2 tablespoons red wine vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- Pita chips, optional

Serving Size: 12 servings (about 1/4 cup each)
Directions
- Heat oil in large skillet over medium-high heat until hot. Add onion, carrots and garlic. Cook 3 to 4 minutes or until onion is tender, stirring occasionally.
- Add eggplant, undrained tomatoes, tomato paste, capers and red pepper. Cook 5 to 7 minutes or until liquid is absorbed, stirring occasionally.
- Mix in honey, vinegar, salt and black pepper. Reduce heat to medium-low. Simmer 8 to 10 minutes or until eggplant is tender.
- Serve warm or at room temperature.
Cook's Tip
As eggplants age, they become mushy and slightly bitter. If the eggplant skin does not bounce back to the touch, sprinkle about 1 teaspoon salt over chopped eggplant. Place in a colander set over a bowl, cover with a plate and weigh down with a can. Let stand about 30 minutes to remove some of the bitter juices.
For an appetizer, slice a baguette or cut pita flatbread into wedges. Brush with olive oil and toast in oven. Serve with caponata.
