Ingredients

  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained
  • 1/4 cup chopped red onion
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon thinly sliced fresh basil
  • 2 teaspoons minced garlic (2 tsp = 2 cloves)
  • 1/4 teaspoon kosher salt
  • 1 French baguette (4 oz each), cut into 1/4-inch thick slices and toasted (about 20 slices)

Directions

  1. Combine tomatoes, onion, oil, vinegar, basil, garlic and salt in medium bowl. Top each slice of toasted bread with 1 tablespoon bruschetta. Serve immediately.

Cook's Tip

Entertaining? Make the bruschetta mixture ahead and refrigerate until guests arrive. Assemble and serve when guests arrive. Or, serve brushetta mixture in bowl and arrange toasted slices around it. Allow guests to make their own as desired. Toast bread slices by placing on an ungreased baking sheet in a preheated 350°F oven for 5 to 7 minutes or until lightly browned and toasted. For added flavor, drizzle assembled pieces with balsalmic vinegar and add fresh cracked black pepper just before serving.
