Ingredients

  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, undrained
  • 1/2 cup peeled, chopped English cucumber
  • 1/2 cup chopped red onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped celery
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons finely chopped jalapeno pepper
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons finely chopped garlic
  • 1/2 teaspoon kosher salt
  • Tortilla chips, optional

Directions

  1. Combine undrained tomatoes, cucumber, onion, bell pepper, celery, olive oil, jalapeno pepper, vinegar, lime juice cilantro and garlic in medium bowl.
  2. Puree about 1 cup of tomato mixture in blender until smooth. Stir back into remaining ingredients in bowl. Cover; chill at least 2 hours before serving. Serve with tortilla chips, if desired.

Try serving this salsa with grilled chicken, quesadillas or scrambled eggs.
