I made this over the weekend for a picnic. Was a big hit. Everyone liked the flavor, different then all the pasta salads with Italian dressing. I have a picky eater to cook for and he really enjoyed.

Made this as a side tonight with grilled chicken cutlets and the entire family really really liked it. The cucumber added a nice crunch and the Hunt's diced Tomatoes with Basil, Garlic and Oregano along with it's juices, added plenty of flavor! I used olives from the olive bar at the market instead of canned and used olive oil instead of Canola but otherwise made as directed. This dish a colorful and tasty which is a nice balance to a dish like chicken or fish which don't have much color on their own as is. And after all, we do eat with our eyes!
