Ingredients
- PAM® Grilling Spray
- 30 jumbo (16/20 count) peeled and deveined shrimp with tail, thawed if frozen
- 6 long metal skewers
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon virgin olive oil
- 1 tablespoon finely chopped shallots
- 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
- 1/3 cup dry white wine (such as Pinot Blanc or Chardonnay)
- 2 teaspoons lemon juice
- 2 tablespoons butter
- 1 tablespoon minced fresh Italian (flat-leaf) parsley
- 3 tablespoons capers, drained, rinsed

Serving Size: 6 servings (5 shrimp with 1/3 cup sauce each)
Directions
- Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat.
- Thread 5 shrimp on each skewer. Sprinkle shrimp with salt and pepper; set aside.
- Heat oil in medium skillet over medium-high heat until hot. Add shallots; cook 1 minute or until softened. Add undrained tomatoes, wine and lemon juice; cook 3 minutes or until liquid is reduced by half. Stir in butter until melted. Add parsley and capers; remove from heat and keep warm.
- Grill shrimp 4 minutes per side or until shrimp turn pink and are opaque. Serve with sauce.
Cook's Tip
Grill the shrimp indoors if preferred, using a covered countertop grill or a grill pan.
Serve the shrimp and sauce accompanied with sides of rice and broccoli. Sauce also would be good served with chicken breasts.
