Ingredients

  • 1 pound Italian pork sausage
  • 1 cup frozen chopped vegetable blend for seasoning (onion, celery, bell pepper)
  • 1 cup sliced fresh button mushrooms
  • 1 can (28 oz each) Hunt's® Crushed Tomatoes with Basil
  • 2 cups water
  • 1-1/4 cups dry large elbow macaroni, uncooked
  • 1/2 teaspoon garlic salt
  • Shredded Parmesan cheese, optional

Directions

  1. Heat large skillet over medium-high heat. Add sausage, frozen vegetable blend and mushrooms. Cook 5 minutes or until sausage is crumbled and vegetables are tender, stirring occasionally. Remove from skillet, drain and set aside.
  2. Place tomatoes, water and macaroni in skillet; bring to a boil. Reduce heat to medium; cook uncovered 10 to 12 minutes or until macaroni is tender.
  3. Add garlic salt and return meat mixture to skillet. Toss to combine. Sprinkle with cheese, if desired.

I made this with hot Italian sausage, but I would prefer making the pasta separately from the sauce and cutting out the water entirely. It was kind of bland with all that water and the pasta had a funky texture when it was cooked in the tomato puree and water, sort of like pre-cooked pasta and sauce combinations that are microwave ready right out of the can. Plus, it required a lot of stirring to make sure it didn't stick to the bottom of the pan.

My kids love any thing with shells and saugage, and this Goulash recipe is one of their favorites. It's nice to make something "from scratch" as opposed to just throwing in a can of pasta sause. And they especially love to eat this as left overs the next day with shredded cheddar over it.

This recipe is a good base, but it needs a little more work to make it 5 stars. And the shredded parm isn't optional! =) I used fresh onion and crimini mushrooms, plus additional crushed garlic. Plus, simmered sauce for an hour to enhance flavor. Fresh basil as a garnish was also wonderful!
