Ingredients
- 1/2 pound boneless skinless chicken breasts, cut into bite-size pieces
- 8 ounces smoked sausage, cut into small bite-size pieces
- 1/2 large onion, chopped (1 large = about 1 cup)
- 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
- 1 pkg (5 oz each) dry yellow rice with saffron
- 1 cup water
- 1 cup frozen green peas, thawed
- Chopped fresh cilantro, optional

Serving Size: 6 servings (1 cup each)
Directions
- Cook chicken, sausage and onion in large nonstick skillet over medium-high heat 5 minutes or just until chicken is lightly browned on all sides, stirring frequently. Add undrained tomatoes, rice and water; mix well. Bring to a boil over high heat. Reduce heat to medium-low and cook, covered, 20 minutes or until rice is tender and liquid is absorbed.
- Stir in peas. Continue cooking 1 minute or until peas are hot. Sprinkle with chopped cilantro before serving, if desired.
