Ingredients
- 5 ounces dry penne pasta, uncooked
- 1 tablespoon olive oil
- 1/2 cup chopped yellow onion
- 1 can (14.5 oz each) Hunt’s® Diced Tomatoes with Spicy Red Pepper, undrained
- 1/8 teaspoon kosher salt
- 2 tablespoons shredded Parmesan cheese
- 1 tablespoon chopped fresh basil

Serving Size: 4 servings (1 cup each)
Directions
- Cook pasta according to package directions, omitting salt.
- Meanwhile, heat oil in large skillet over medium-high heat. Add onion; cook 3 to 5 minutes or until tender, stirring occasionally.
- Add undrained tomatoes, salt and cooked pasta; toss to combine. Sprinkle with cheese and basil.
Cook's Tip
Serve as a side dish with grilled chicken or steak, or with a side salad for a 'lighter' lunch or dinner.
Try serving at room temperature. Perfect for a summer picnic.
Stir in a favorite cooked vegetable for a heartier dish.
