  • 5 ounces dry penne pasta, uncooked
  • 1 tablespoon olive oil
  • 1/2 cup chopped yellow onion
  • 1 can (14.5 oz each) Hunt’s® Diced Tomatoes with Spicy Red Pepper, undrained
  • 1/8 teaspoon kosher salt
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon chopped fresh basil

Directions

  1. Cook pasta according to package directions, omitting salt.
  2. Meanwhile, heat oil in large skillet over medium-high heat. Add onion; cook 3 to 5 minutes or until tender, stirring occasionally.
  3. Add undrained tomatoes, salt and cooked pasta; toss to combine. Sprinkle with cheese and basil.

Cook's Tip

Serve as a side dish with grilled chicken or steak, or with a side salad for a 'lighter' lunch or dinner. Try serving at room temperature. Perfect for a summer picnic. Stir in a favorite cooked vegetable for a heartier dish.
