Spray inside of 4.5-quart slow cooker with cooking spray. Heat vegetable oil in large skillet over medium-high heat. Cook chuck roast in batches, taking care not to over crowd pan. Cook each batch 3 to 5 minutes or until browned on each side and transfer to slow cooker.
Add beef broth, Italian seasoning, chopped pickles, giardiniera and onion to slow cooker. Stir to combine and cook on high for 5 to 6 hours. Remove beef chunks and shred with two forks, return to slow cooker and stir again to combine; cook an additional 30 minutes.
Preheat broiler; split ciabatta rolls and add shredded beef. Top with two slices cheese and place under broiler until melted, about 2 minutes. Serve spicy Italian beef sandwiches with additional Vlasic® Sweet Heat Pickle Chips.
