  • 1 unbaked deep-dish pie shell (9-inch)
  • 4 slices bacon
  • 1/2 cup chopped red onion
  • 3 eggs
  • 1 cup heavy whipping cream
  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, drained
  • 1 cup shredded Cheddar cheese (1 cup = 4 oz)
  • 1/3 cup thinly sliced fresh basil

Directions

  1. Preheat oven to 375°F. Pierce bottom and side of pie crust with fork. Bake 7 minutes.
  2. Meanwhile, cook bacon in large skillet over medium-high heat until crisp. Remove bacon from skillet, reserving 1 tablespoon of the drippings in skillet. Drain bacon on paper towels. Add onions to drippings in skillet; cook and stir until tender.
  3. Beat eggs and whipping cream in large bowl with wire whisk until well blended. Crumble bacon. Add to egg mixture along with the onions, diced tomatoes, cheese and basil; mix well. Pour into pie shell.
  4. Bake 55 minutes, or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 6 slices to serve.

This is yummmmmmy! I added an extra egg yolk for richness. I also used 1/3 cup scallion because I love scallion, egg and tomato together. (Btw, same ingredients, less the crust, cream and cheese, make a great egg white omelet.) The tomatoes are terrific for their freshness. True tomato flavor shines through while not being watery, as fresh tomatoes tend to be. Next time, I'm making it with a home-made cheddar cheese crust.
