Tomato Fennel Sauce

Ingredients
- 2 teaspoons extra virgin olive oil
- 1 cup chopped fresh fennel bulb
- 1/2 cup chopped red onion
- 2 teaspoons minced garlic
- 1 can (28 oz each) Hunt's® Whole Peeled Plum Tomatoes, undrained
- 1 cup reduced-sodium chicken broth
- 2 tablespoons thinly sliced fresh basil
- 1 teaspoon fennel seeds
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Hot cooked refrigerated cheese ravioli or sausage tortellini, optional

Serving Size: 8 servings (about 1/2 cup each)
Directions
- Heat oil in medium saucepan over medium-high heat until hot. Add fennel, onion and garlic. Cook 5 minutes or until onion is tender.
- Add undrained tomatoes, broth, basil, fennel seeds, salt and pepper; stir to combine. Bring to a boil over medium-high heat. Reduce heat to medium-low; simmer about 15 minutes to blend flavors and thicken sauce.
- Place sauce in blender container; pulse 1 to 2 minutes or to desired consistency. Serve over pasta, if desired.
Cook's Tip
This sauce is particularly delicious over cheese or sausage-filled pasta.
