  • 2 tablespoons Parkay® Original Spread-tub
  • 1 cup sliced carrots
  • 1/2 cup diced celery
  • 1 cup chopped fully cooked lean ham
  • 2 cans (15 oz each) Great Northern beans, drained, rinsed
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
  • 1 can (14 oz each) reduced-sodium chicken broth
  • 1-1/2 cups water

Directions

  1. Melt Parkay in large saucepan or Dutch oven over medium-high heat. Add carrots and celery; cook 8 minutes or until vegetables are tender, stirring occasionally.
  2. Add all remaining ingredients; heat to boiling. Reduce heat to medium-low; simmer 5 minutes.

What a great recipe! My children don't care for soup, even chicken noodle! I liked this recipe, because it includes two things that they do kind of like...ham and beans. My husband, kids, and I all enjoyed this soup. It has plenty of flavor, and it's nutritious to boot. Did I mention that it is fantastically easy to make?

This is one of the best ham and bean soups I have ever had. The broth has a wonderful herb flavoring. An excellent addition to your diet, specially if you want to watch what you eat and loose weight. What a great way to fill up knowing you're eating healthy and that it's really good for you! Thanks for the recipe!

I really enjoyed this recipe. I added a lot of black pepper to the soup to give it an extra spice without being overbearing. I served it for lunch with a salad and little small sandwiches. I love how this soup was easy to make and it is also healthy.

I was surprised at how much my hubby (tends to be a meat & potatoes guy) and both my kids (one of whom is VERY picky) loved this soup. I did make a few changes. I sauteed the veggies in olive oil (instead of margarine) and added some minced onions. I also added some ground pepper, garlic powder, and a dash of chili powder to the broth. Great, easy recipe!

Gee, Save for I make more at one time, This is almost the exact recipe I use when I make bean soup, and on my budget, it is a very good thing that I happen to LIKE bean soup a lot (The difference... I add broccoli as well as carrots and celery)

This soup is very good and easy. Used leftover ham from a holiday dinner. Didn't have carrots, but substituted cauliflower instead. Added more garlic and small soup pasta. topped it off with fresh grated Parmesan cheese. Went back for seconds. Will be making it again
