Ingredients

  • 1 pound ground round beef (85% lean)
  • 2 cups quartered lengthwise, sliced zucchini (2 cups = 1-1/2 med)
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes with Garlic, undrained
  • 1 cup water
  • 1-1/2 cups instant white rice
  • 3/4 cup shredded Cheddar and Monterey Jack cheese blend

Directions

  1. Cook beef, zucchini, onion and salt in large skillet over medium-high heat 7 minutes or until beef is crumbled and no longer pink, stirring occasionally; drain. Add undrained tomatoes and water. Increase heat and bring to a boil.
  2. Add rice; stir well. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle with cheese.

I am a full-time Nursing student and part time worker. I also have a 3 year old who is pretty picky. I LOVED the taste of this dish! It was so simple to make, and the flavor was very good. Also didn't make a lot of dishes, which is always a plus. I used brown rice as a substitute (minute rice makes a brown rice now) and added a container of mushrooms. It was super yummy, and I will make it again!

I have this reciepe in an old cookbook of mine. It calls for sausage, instead of hamburger. Sweet basil adds good flavor. My kids love it!

Certainly a kid friendly dish! It has that sort of 'Hamburger Helper' feel to it which many people love. One pan meals are perfect for busy mommies with little time or working moms rushing to get something on the table. This is the perfect meal for that sort of day. At my house, we all enjoyed it. Not a fav but not bad either. But then, we are a house of foodies so you must take that into consideration! The only thing I changed was that I made brown 30 minute rice on the side and added it after. We avoid all processed, quick food when possible. So no instant white for us. Other than that, we also added more spices like cilantro and red pepper. It was perfect to watch a recorded episode of Criminal MInds to!

I really liked this recipe. In fact, I wolfed it down and got seconds! It was very easy to make, and I loved being able to make it all in one skillet! The zucchini and onion blended perfectly with the Hunt's seasoned tomatoes. The rice added some nice texture also so it wasn't overly-meaty. I loved how this was so full of veggies but still so tasty! Prep was pretty simple, the chopping of the onion and zucchini being the most labor-intensive tasks. Clean-up was a snap, just the one skillet, a knife, and cutting board that I put in the dishwasher. I am always looking for creative ways to prepare ground beef and this fit the bill. I'm usually kind of lazy and just make pork or chicken so it was nice to have something different, and the zucchini really makes this a unique dish! Give it a try and I am sure you'll be pleased.
