1 tablespoon vegetable oil
1 pound ground sirloin beef (90% lean)
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Hatch Chilies, drained
2 teaspoons taco seasoning mix
5 flour tortillas (12 inch)
5 tostada shells
1 cup prepared cheese sauce
1/2 cup sour cream
1-1/2 cups shredded iceberg lettuce
1-1/2 cups shredded Mexican blend cheese

In a 12-inch non-stick skillet, heat oil over medium-high heat. Add ground beef and cook & stir until browned and crumbled, about 5 to 7 minutes. Drain excess fat and return beef to skillet. Add drained tomatoes & chilies and taco seasoning. Cook and stir an additional 2 to 3 minutes or until heated through.
Heat tortillas according to package instructions; keep warm. Heat cheese sauce according to package instructions.
Making one wrap at a time, lay out one tortilla on countertop. Spread about 3/4 cup beef mixture in center of tortilla, then top with about 1 1/2 tablespoons cheese sauce. Gently press tostada shell down on top of cheese layer, then spread about 2 tablespoons sour cream in an even layer on top of tostada shell. Top with about 1/4 cup lettuce and about 3 tablespoons shredded cheese. Working in a circle, tightly fold tortilla edges up and over the center. Repeat process for remaining wraps.
Heat a 10-inch non-stick skillet over medium-high heat. Once hot, spray pan with cooking spray, then place wrap seam side down and cook until golden brown, about 2 to 3 minutes. Flip and cook other side for additional 1 to 2 minutes or until golden brown. Repeat with remaining wraps. Cut and serve crunchy taco wraps immediately.
