1 pound cherry tomatoes
1 clove garlic
1/2 tablespoon olive oil
kosher salt
ground black pepper
1 tablespoon Hunt's® Tomato Paste
6 fresh basil leaves, thinly sliced
1/2 teaspoon dried oregano
crushed red pepper flakes, pinch
1 pkg (9.6 oz each) Gardein® Crispy Golden Chick'n Nuggets (15 pieces)
8 ounces Bocconcini (vegan mozzarella balls/pearls), sliced in half

Preheat oven to 400°F. Then turn broiler to high.
Place tomatoes and garlic on a baking sheet or in a cast-iron skillet, drizzle with olive oil, and
season with salt and pepper. Broil until starting to char, about 8 to 10 minutes depending on
your broiler. Let cool slightly.
Scrape tomatoes and garlic into food processor with tomato paste, oregano, red pepper, and
basil. Season well with salt and pepper. Puree. If needed to thicken, place in a saucepan on the stove and reduce for 10 minutes.
Set oven to 425°F. Place Gardein® Crispy Golden Chick’n Nuggets on a sheet pan in a single layer and bake for 12 to 15 minutes, flipping halfway through. Remove nuggets from oven and set aside. Return broiler to high.
Spoon tomato sauce over Chick’n Nuggets and place a halved mozzarella ball on top of each. Broil 3 to 5 minutes or until cheese is melted. Remove from oven and place on a serving platter. Garnish with fresh basil leaves and spoon remaining sauce in a small ramekin for dipping. Serve and enjoy!
